Happy Burns Night!

 

Vegan Haggis

Celebrate burns night with home made haggis! 

Ingredients:
1 cup dried green or brown lentils, rinsed
1 cup steel-cut oats
1 large onion, finely chopped
2 cloves garlic, minced
1 medium carrot, grated
1 cup mushrooms, finely chopped
1/2 cup walnuts, finely chopped
1 tablespoon tomato paste
2 tablespoons soy sauce or tamari
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and black pepper to taste
2 tablespoons olive oil

Instructions:
1. Prepare Lentils: Cook the lentils according to package instructions until tender. Drain any excess water.
2. Saute Vegetables: In a large pan, heat olive oil over medium heat. Add the chopped onion, garlic, carrots, and mushrooms. Saute until the vegetables are softened.
3. Combine Ingredients: In a large mixing bowl, combine the cooked lentils, sauteed vegetables, oats, chopped walnuts, tomato paste, soy sauce, thyme, rosemary, coriander, cumin, smoked paprika, salt, and pepper. Mix well to combine.
4. Cook Mixture: In the same pan used for sauteing the vegetables, add the lentil mixture. Cook over medium heat for about 10-15 minutes, stirring frequently until the mixture is heated through and well combined.
5. Adjust Seasoning: Taste and adjust the seasoning as needed. Add more salt, pepper, or herbs according to your preference.
